Couscous.  
I've recently discovered couscous and it's glories. I microwave the water, pour it into a bowl, add the couscous, and cover with a plate. (The times and amounts are on the container.)

Some of my favorite mixes:

artichoke hearts, olives, and anchovies
chorizo and cheese
curry left-over meats

I love couscous!
